1/4cDiced mushrooms
3tbCrushed unsalted peanuts
2tbThai fish sauce
2tbThai sweet black bean sauce
1tbRice vinegar
2tsSoy sauce
1tsWhite pepper
2tbChopped mint leaves, plus 1 sprig mint
1cFresh bean sprouts
2tbThinly sliced leeks

Soak noodles in 8 cups cold water for 45 minutes. pepper & mushrooms, and stirfry for 1 minute.
